How to enter/track an older constituent who has a "care taker" contact?

Options
We have a long time donor that is getting older in age who has an endowed scholarship fund with us.  Her son recently reached out us with the following message:  "My mother X and dad X are currently in an Assisted Living facility called The Cottages in Shawano.   If you need to send anything related to the scholarships, you can use this e-mail or this address."

I'm not sure the best way to update RE with this.  She hasn't passed yet, so I don't want to inactivate her account yet.  However, I need to enter his name/contact info for mailings and scholarship thank you letters... So I'm thinking put him in as a constituent and add him as the primary contact for her and her funds?  Also, I'm thinking we shouldn't share her giving information as that is confidential, or at least until she has passed and we know he is the executor?

    Do you have a method already established for tracking assistant's information?  If you don't, I would suggest adding the caregiver is either a partial or full record and linking them into the donor's record.  Maybe set up an annotation or business rule pop-up that notifies your users that all communications need to go through the donor's caregiver.
