Creating Records for Grant making organisations

Hi, I'm Andy Ellis from a UK Charity, Staying Put. We've never had a CRM before and have just purchased E-tap. The system is up and running and I now have the task of creating records for individuals and for Grant making organisations, where the bulk of our money comes from. So, in creating a record, let's say for BBC Children in Need, Do I just create a ‘constituent’ record and select ‘Grant Making Organisation? I’m confused because there's a set of user defined field already created for me by the trainer, for Grant making organisations, but those fields don't appear when I select ‘Grant making organisation’ which I thought they would.
