What data centres are used for Online Express

I'm trying to understand the data flow of Online Express donations to report to our data protection officer. Where is the form data stored before it is downloaded to our Raiser's Edge (on prem) installation? In particular is it hosted in the US or EU, or is that something that is configurable depending on our requirements?

Can answer one part of the question, having spoken to Support. The Online Express servers are in Boston, MA.
