Issues with notification e-cards

I am having a couple of issues with the setup of e-cards. I am somewhat of a newbie with these so any help is greatly appreciated!

1.) I am testing the notification cards and the notification email keeps showing Ms. Stacy Schmidt even when I change the title to Mrs. or do not include a title.

2.) The message text appears very tiny when received and I am having trouble tweaking this within the stationery setup. Any tips?

3.) The email says it is sent from Site Administrator on behalf of... Where would I go to change Site Administrator to SPCA for Monterey County?

4.) Is there any way to test out the entire donation/e-card process without making an actual donation? When I do the test on the donation form the e-cards notifications are not sent so I have been doing my tests with my own credit card so I can see how everything looks on all ends.
