How to set user setting for currency

Hi,

I just found out that gift currency type will default load according to the country of the preferred address. Therefore we have many gifts that should have been Canadian dollars but displaying all different currencies instead, and currently there is no way except for deletion and re-entry to fix the currency type once the gifts have been posted.

Does anyone know where to update the setting so gift currency will not default from preferred country?
