I would like to create a catalog type donation page in NetCommunity Spark...is that possible?

We can't do this in a donation form, but we can set up an event where the pricing options are items.

Yep, every item is a unit. There's not a guide since we're doing something a little specific here, but I have no doubt it'll make sense to you once you start setting it up.
