Help understanding Security Categories for email

Even with documentation, Security Categories, Security Groups, Permissions, and how you go about assigning everything thoroughly confuses me.

Are there any simple English descriptions or flow charts or anything else out there to make this easier to understand? I think I get most of how website user groups work, it's how to go about planning and setting up our administrator groups that's the problem.
