How do I distinguish which organization gave what gift?

Do you mean after you merged the two organization records? So now all gifts are on just one of the records?

Yes.
My apologies for not clarifying.

I think the gifts that were moved over will all have a "date last changed" of whatever date the records were merged, provided the gifts haven't been amended since.

Why do you need to know this after merging?  Should you not have merged the 2 records after all?
