How do you change the addressee and salutation of an organization?

Of the organization directly?  You can't.  What you can do is add a contact in relationships and provide addressee and salutation info for the contact.  Just remember to pull the contact on an export or include them in your mail merge.

As Robert said, you can't change the org name. Are you talking about changing the format in Mail or where? In Mail, when you select add/sal as a field to include you have the "option" button on the right to select what add/sal format you want to use for the contacts.
