I'd like to offer site visitors a quick sign-up form embedded on a page so I can send them email updates later. If I set this up as an interest, I don't think I can embed it on the page - it would have to be managed via user profile after they've registered/logged in. I want to just take their email address without registation/log-in. Any suggestion for how to do this?

A survey - which you could embed.

However, I don't think you can do it with just an email address - since that's less that you need to make a Cons record. There is a special Question Type called "Constituent Registration Info" that has everything you need. Then just set up the interest in the Related Actions > Associate Groups and Interests section of the Survey config.

Note that it is possible to configure a Survey to collect only email address if you want!
