Where can I find step-by-step instructions (or even just a basic overview) for setting up the eStore functionality in NetCommunity Spark? I seem unable to locate any documentation or tutorials.

It looks like I can answer my own question after all. I hope this helps someone else in the future. While these instructions don't tell you how to navigate to the eStore functionality, the document does cover a lot of detail of how to use it once you get there.

In my case, it would appear BBNC does not have the eStore activated, as far as I can tell, which might explain why I cannot find it through the navigation. If you're in the same situation, I'd suggest running a trouble ticket and/or calling your sales rep. That's where I'm at: trying to find the missing feature.
