How do you change the displayed name when viewing class notes or other note types?

We are using class notes and prayer requests as a way for our alumnae and alumni to add information they would like to share with others. Currently, the name of the constituent submitting the note is being listed as FirstName Mid Initial LastName, which is not acceptable for some of our constituents. How can we change that display to be the preferred addressee or other addressee type?
